This morning Azita told me she wanted mac and cheese for breakfast. I was really craving some a week or so ago and had an idea but never made it, so I figured I’d give it a shot. Also, I haven’t been eating GF pasta while trying to clear up all of Ada’s symptoms.
But, we had some Trader Joe’s rice pasta, so hopefully it isn’t cross contaminated because I just ate two helpings of it.
I was totally happy and comfort fooded up by what I came up with.
So here goes:
One can of butternut squash puree
half can of coconut milk
tsp ginger powder
juice of half a lemon
Boil the pasta, pour mixture over pasta and baked 15-20 minutes.
I could have added pepper, some more spices, maybe even tomatoes or something, and someGF breadcrumbs on top– I didn’t have any and this was for Azita so I had her expectations in mind.
Little rascal told me she didn’t like the sauce. I loved it! Actually, it could have taken more lemon juice (the acid makes it taste like cheese) and salt, but since it was a first time thing I didn’t want to ruin it. It was like a very, very mild cheddar taste. I think– it’s been a while since I had cheese! Oh and for the entire bag of pasta, I should have doubled the sauce. I needed a little more.
I’ll be making it again.
