We cheated a bit on this one– my dad brought us some Trader Joe’s gluten-free pancake mix a while back, and I finally decided to use it this morning despite the fact that I mostly make everything from scratch to avoid cross-contamination gluten issues with some mixes.
But we used to make pancakes every weekend with homemade strawberry sauce and I missed that. The baby is all rashy and itching her ears (until she gets little bloody spots) so she’s reacting to something, and I guess I just figured a pancake mix can’t hurt.
I’ve got some good GF scratch pancake recipes too– I just need to restock on my GF flours, mainly millet, teff, and sorghum.
We used banana’s in place of the eggs, since I’d prefer not to have a migraine tomorrow and I’m not really sure about Ada and eggs.
The slight banana taste was nice. I used a frozen plum and cooked it down with some pomegranate seeds. ‘Twas comfort food at its best!
Whenever Harris Teeter has its rack of fruit and veggies going bad, I grab the bags– usually just a dollar each– and use or freeze it to save money and widen our fruit variety.
Amazingly, day old frozen plums make for a pretty satisfying alternative to strawberry sauce… something I miss from pre-Ada days!
