We’ve really been enjoying making our own ice cream these days. The ingredients are simple. Two cans of light coconut milk, honey to taste, and either pour into popsicle molds or use an ice cream maker. We have am ice cream maker, and I swear it comes out just like McDonald’s soft serve. We’ve also made peach and strawberry, but I’ve got to get a little better at the proportions.
Today I’m making some with stevia. So if you use light coconut milk, good quality stevia and good vanilla, you’ll have surprisingly familiar tasting ice cream without dairy, sugar or as many calories, depending on what it is you are going for.
